Vegetable Egg Burrito

Ingredients:
  • 1 Green Bell Pepper (Diced)
  • 1 Red Bell Pepper (Diced)
  • 1 Medium Onion (diced)
  • 2 garlic cloves (Minced)
  • 6 Mushroom heads or a handful of the sliced kind (Diced)
  • 2 sm. Broccoli Heads (Florals only)
  • ¼ Cup Milk (Optional) Grated Cheese (Fat-free or to your own discretion)
  • Fat-free Sour Cream (Optional)

    Directions:

    1) Use a large frying pan. Preferably deep dish pans because it can get messy. drizzle olive oil (Or similar) in pan. Add vegetables, cover, and heat on medium flame until the vegetables look darker in color, but leave crisp.
    2) Mix eggs, milk and 2 tbsp. water (optional).
    3) Add egg mix to steamed vegetables and cook until eggs to desired readiness.
    4) Reduce heat and serve in warm tortillas with grated cheese and non-fat sour cream.

    *You can substitute Egg beaters, but you will have to work the conversations out
